The meat song you want is by Copland. He can be alright but stick to Mr. Guitar's list for some more interesting stuff. Or check out mine.
Bach, Prokofiev, Chopin, Beethoven, Vivaldi, Schumann, Stravinsky, Tchycowsky (sp?), shostakovich, Scriabin (oh yeah), and Schubert. All are great. And if you want a living composer check out Nathan Shirley, I like his piano stuff the best (of course I play a little piano). This is a site that has his music:

I like 'toccata' 'images' and some other stuff a lot.

Gees, that would be a long, long list. Essential composers are Albeniz, Bach, Beethoven, Brahms, Britten, Berg,(can't go wrong with the "B"s) Chopin, Dvorak,Debussy, Elgar, Faure, Gluck, Grieg, Haydn, Handel, Katchaturian, Liszt, Mendelssohn, Mozart, Orff (Carmina Burana) Purcell, Ravel,Stockhausen, Stravinsky, Strauss (Richard), Teleman, Villa-Lobos, Varese, Webern, Xenakis (I had to put an X one in! and he's really interesting) and Zemlinkski!
But the greatest of them all is JS Bach.
Get anything from the library by any of them. You can't go wrong.

you mean like symphonies and concertos?
if you do, there's the obvious stuff like mozart and hayden... and bach... i had to play brandenburg concerto movements one and two for orchestra last year. then i heard it playing at panera bread. that's by bach.
