Okay, I have 1 1/2 lb. of ground turkey....and we are on a diet...any ideas?

    I would take some frozen vegetables(peas/corn/carrots).. heat that very well and in a separate pan, heat some ground turkey that has been mixed with crushed soda crackers mixed IN with the turkey meat and make small balls(with the hands) out of the turkey meat.. balls about the size of a quarter.. heat those up very well and when finished, mix those with the vegetables.. salt and pepper to taste.. That would make a very good, LOW calorie diet

    Stuffed peppers are really good. I made those with ground turkey, a little rice to mix in, 1 - 2 eggs, salt, pepper and any other seasonings you may like. Stuff them in any color peppers and you can use a can or 2 of stewed tomatoes or tomato sauce and a little tomato paste, pour over the top and then just bake.

    2 pounds freshly ground turkey

    Four 1-inch cubes of Brie cheese, 1/2-inch thick

    1 tablespoon olive oil

    Salt and freshly ground pepper

    1 large granny smith apple, cored and sliced 1/2-inch thick crosswise

    1 tablespoon vegetable oil

    Four leaves of Bibb lettuce

    To prepare the burgers:

    Shape the meat firmly into 4 round uniform patties about 1 1/2inches thick. Make a small indentation in the center of each patty and place 1 cube of the cheese in each. Knead the meat slightly to cover the hole. Brush both sides of the burgers lightly with the olive oil and season with salt and pepper to taste. Heat a large cast iron skillet over medium high heat until just smoking. Cook the burgers to your liking. Brush the apples on both sides with the vegetable oil. Grill until golden on both sides. Place a burger on the Bib lettuce, top with 1 or 2 apple slices and a dollop of ketchup

  • Chili

    Ground Turkey or Beef

    Onions

    1 can crushed tomatoes

    2 cans red kidney beans - rinsed and drained

    1 small tomatoe paste

    1 can of beer

    packet of taco or chili seasoning

    If using turkey ( Brown without oil)

    Brown meat and onions in skillet until brown.

    In Crockpot put Crushed tomatoes, beans, paste, beer and packet of taco seasoning.

    Add Meat/onions to other ingredients in the crockpot

    cook for 4 to 6 hours

    The possibilities are endless...I make taco meat and either make enchiladas or tacos, just season it with taco seasoning, and meatloaf, if the turkey is really lean like 3 percent fat it may be too dry for meatloaf. The thing I love about ground turkey is that it doesn't have a lot of flavor on it's own, but takes on the taste of whatever you season it with. Use your imagination...lasagna, spaghetti with meat sauce, hamburgers, ...just always add a lot of seasoning or onions & garlic...

    Take the turkey and mix it with 1 box of Chicken Flavored uncle Ben's Rice and save 1 TBS. of the seasoning for later. Roll into Meat Balls and put on a cookie sheet at 400 for 18min. Remove from cookie sheet and place into a large sauce pot and add the amount of water from the Uncle Ben's Package with the rest of the seasoning and simmer on low for 35 min adding more water as needed. 5 Min before finishing add 1 can of Cream of Mushroom Soup stir in and server over brown rice.

    Turkey burgers. I like them better than the regular ones. I mix the ground turkey with salt, pepper, onion powder, garlic powder, worcester sauce and some ground red pepper for some spice. Real good.

    16 oz whole wheat egg noodles, cooked and drained

    16 oz fat free sour cream

    16 oz fat free cottage cheese

    16 oz jar of salsa

    1 1/2 lbs turkey, cooked

    1 lb fat free cheddar cheese, shredded

    In bowl mix together sour cream, cottage cheese, salsa and meat. In a 9'x13 pan place a layer of noodles, then a layer of the meat mixture and then a layer of cheese. Repeat layers until all is used. Bake at 375 degrees for 20-30 mintues.

    Turkey Meatloaf

    1 large portobello mushroom

    1 small Italian eggplant

    1/2 pound lean ground turkey breast, no skin added

    1/2 pound ground sirloin

    1 (4-ounce) can tomato paste

    2 teaspoon dried oregano

    2 teaspoon dried basil

    1/2 teaspoon salt

    1/4 teaspoon crushed black pepper

    1 tablespoon Worcestershire sauce

    1 teaspoon paprika

    1/4 red onion, chopped fine

    2 cloves garlic, crushed

    1 medium egg

    Preheat 350 degrees F.

    Using a food processor with the grinder attachment, grind the mushroom and eggplant together. In a large bowl, combine the mushroom mixture with the turkey, sirloin, tomato paste, oregano, basil, salt, pepper, Worcestershire sauce, paprika, red onion, garlic and egg until completely blended. Be careful not to over blend. Spray a nonstick loaf pan once with canola oil cooking spray. Using clean hands, pat the turkey mixture into the pan. Bake for 45 minutes or until internal temperature reaches 160 degrees F.

    Knife-and-Fork Chili Turkey Burgers

    Yield: 5 servings (2 burgers each)

    Burgers:

    2 1/2 pounds ground turkey

    1 cup shredded sharp Cheddar

    1/2 cup finely chopped red bell pepper

    1/4 cup finely chopped red onion

    1 tablespoon Quick and Easy Sugar-Free Ketchup, recipe follows

    1 tablespoon chili powder

    1 teaspoon salt

    1/4 teaspoon black pepper

    Pinch cayenne pepper

    1 large egg, beaten

    2 tablespoons vegetable oil

    Garnish:

    10 tablespoons mayonnaise

    10 red leaf lettuce leaves

    10 tomato slices

    10 onion slices

    10 pickle spears

    Make the Burgers: Mix all the ingredients together with your hands, except the oil, in a bowl.

    Divide the meat mixture into 10 equal-sized patties.

    Heat the oil in a large skillet over medium-high heat. Working in batches, cook the burgers, turning once, until lightly browned and cooked through, about 7 minutes per side.(A instant-read thermometer inserted in the center of the thickest burger should read at least 165 degrees F.)

    Divide the burgers among plates--2 to a plate. Dollop each serving with mayonnaise and stack lettuce, tomato, onion, and pickle on top.

    Quick and Easy Sugar-Free Ketchup:

    8 ounces no-sugar-added tomato sauce

    6 ounces no-sugar-added tomato paste

    2 tablespoons white vinegar

    1/4 cup sugar substitute (recommended: Splenda)

    Mix all ingredients together in a small bowl. Refrigerate until ready to serve.

    Yield: 1 1/2 cups
