Anyone have a recipe for Spezzato ????
My aunt use to make this dish years ago with veal and green peppers and gravy.. I tried to make it once but didn't tast the same..
The correct spelling is "spezzato" my family made it with either veal or chicken...
1 chicken, cut into pieces
2 plus tablespoons of olive oil
1 large onion, diced
3 large garlic cloves, chopped fine
1/2 cup chicken broth or water
2 tablespoons dried oregano
salt and pepper, to taste
1 pound pasta of your choice
Sauté the chicken in olive oil until golden browned; add the onion and garlic, and sauté until soft. Add the oregano, salt and pepper over the top of the chicken. Add the broth or water, and cover the pan. Cook over low heat for 30 minutes. Keep covered off the heat when you finished and while the pasta is cooking.
Cook the pasta according to package directions, drain and transfer it to a small serving bowl.
To serve, remove the chicken from the pan and pour some of the sauce from the chicken over the pasta. Pour the remaining sauce into a gravy boat. Serve each person a piece of chicken with the pasta and lots of freshly grated cheese; pour on ext

Recipe: Black Pepper Chowder
This is our version of a cookbook favourite. It's vegan. Any mild vegetables you have kicking around will do, but the corn, cauliflower and potato are necessities.
1 tbs. margarine
1 onion
6 garlic cloves
3 leaves basil (2 tsp. dry)
1 tsp. thyme (1/2 tsp. dry)
1 tsp. salt
1 e. potato, celery and bok choi stalks, carrot
1/2 caulifower
2 cups corn
15 mushrooms
1 tbs. black pepper
3 cups water
3 cups soy milk (room temperature)
1. Melt margarine over med. heat. Chop and sauté the onion, half the garlic, and the thyme and basil, along with the salt, until golden.
2. Stir in all vegetables but the corn and mushrooms; after 5 minutes add these, along with the pepper, and cook 5 minutes more.
3. Pour water over and simmer until potatoes are tender. Mince and stir in the remaining garlic, then pour in the soy milk. Heat to hot. If it's not floating with pepper, it won't keep away colds, so add more. Serve with fresh pepper and hot rolls.

I'm not sure what you're talking about but it sounds kind of like what my family calls spezzatino which is veal cut in cubes and cooked in sauce and you can add potatoes, peppers, etc. or you can just do the meat by itself. I'm italian and what we usually do is cut the veal in cubes and fry it in a pan and when it's browned you add plain tomato sauce. (we can our own tomatoes). Add salt to taste and put your potatoes or peppers or whatever you like in when you put the sauce in because the potatoes will take a while to cook. Don't flavour it with crazy spices. Just make sure its salted properly and let it cook until the potatoes are soft or until you see that the sauce has because more concentrated and has evaporated a bit. If it turns out the way ours does, you'll love it. I've yet to meet a person who doesn't. GOOD LUCK!! :)
