Why are you supposed to boil a bagel before baking it?

I make bagels, but do not boil them, and they are delicious

    Boiling them before baking is the classic way to make a bagel. It gives it that unique shine and texture. While you are making a bagel shaped bread, you are not making a true bagel. Just go with whatever makes you happy.

    If you do not boil them, they might well be delicious, but they are not bagels, they are just donut-shaped bread rolls! To create the chewy texture of a bagel, the dough must first be boiled briefly to make the gluten do its thing.

    They are not bagels then, they are round bread rolls.
