Your best bet is to ensure that you have a "tasteful" site, with no porn, no links to casinos or online gambling.
Various advertisers have different requirements, so you basically have to apply for each one. Some advertisers have a minimun traffic requirement, or perhaps they just don't feel your site fits with their product line. The best way to find out is simply to apply to them.
There are some companies that work with advertisers to develope affiliate programs, and working with publishers (that would be you).
Here's one such company:

Just sign up (it's free).

creating a site just for affiliate advertising would not be too worthwhile, although there are plenty.
a site SHOULD have your passion invested in it. that is, it should be about something you are very interested in.
why? because google and the lesser search engines can detect your skill and enthusiasm in the way you write your pages.
the best affiliate program i have found so far is GOOGLE ADWORDS. you simply paste some code on your page, and they do the rest.
they have no criteria beyond that the site may not be pornographic, or promote illegal activity.
the only limit is that they will not pay you until you have $100 in accumulated revenue.
