Both were much different than today, mainly because tomatoes, peppers, and potatoes were all from the New World. After the exploration of the Western hemisphere, those foods were brought to Europe where they became a major feature of the cuisine.

Pre-Colombian Spain and Italy both had an abundance of olives and olive oil. Both used bread. Both used some meat and fish (depending on the proximity to the sea), but not near as much of these protein foods as they use now.
