coffee beans are not burnt. a good roaster only cooks the beans until they are flavorful..just like a good steak that is good to your preferrance. rare, medium, well done...charcoal never..some coffee beans are burnt but that is an accident or a roaster that does not do his job well...this results in bitter coffee. you can taste the burnt beans just like you can taste burnt anything else. the well roasted bean is not carcinogenic.
