Is god really omniscient?
If god created all animal species and then created humans, and then humans created various dog breeds, does god have no idea about greyhounds, dachshunds or Dalmatians?

In Hinduism he is, not sure about other religions......
by the way your question about dog breeds opens up numerous realms of answers that could vary and thus confuse the topic even further, basically its not a question worth worrying about,
In the end you believe what you want to believe, despite what others think...........

God created a "kind" of animal we call a dog. Men have breed dogs to get new breeds of dogs, but they are all the same kind of animal.
God knew all the different breeds of dogs that would be breed through out history.

If God is omniscient, does he know what he's going to do next? If he is omnipotent, does he have the power to do something other than what he saw, making him not omniscient after all? Or is he bound to that future, leaving him not really omnipotent?

I wouldn't say that we created dogs...humans have definately "engineered" certain mutations to our desired benefit but a dog is a dog is a dog...All things were created by God, and we use or abuse them as we see fit...
