Capers are the green, unopened flower buds of a bush that grows in the Mediterranean region. Most of the capers sold in supermarkets are pickled in a vinegar brine and are about the size of a peppercorn, although some (usually from Italy) are as large as a pencil eraser. Spanish-imported stemmed caperberries are about the size of a cocktail olive. Capers should be rinsed before using to remove excess salt. They add delicious flavor to sauces, condiments, meat, chicken and fish dishes, etc.

Capers were my mothers favorite condiment she would add them randomly in recipes.

There are several various different caper sauces if you plug in caper sauce into your yahoo search engine but this should answer your primary question:http://en.wikipedia.org/wiki/Caper

little round green organic things w/a salty taste. Try chicken or veal piccata - capers are in those dishes too and make it really yummy!
