how long can sushi last without it going bad?

If its cooked, it should last for some time..I like to eat it fresh as raw fish tastes different after sitting in the air for even a short time..I worked with a lady who brought in a huge sushi platter which included tuna, yellowfin, eel and salmon, all of which were raw and it lasted for 6 hrs without tasting different..we kept it over ice and it was fine. That sounds like a killer dinner..wish I could come:D

Not long!

Wrap it, and refrigerate it, then get it out when you need it.

Unless you plan on having a truly lazy dinner (about 5 to 8 hours long) you shouldn't have a problem, but if there's a LOT of sushi, keep some of it covered until you NEED to uncover it.

If your sushi doesn't involve raw fish, then it's not SO important - in Japan people often make themselves sushi without raw fish and keep it in an un-refrigerated lunch-box all morning. And it gets really HOT here in the summer! But if it's refrigerated it will last about 3 days, and if it's not refrigerated it'll only last half a day (if not exposed to air, bacteria, flies, etc.)

Anything left over should go back in the fridge as soon as possible, and if it's got raw fish it should be eaten the same night, but if it hasn't got raw fish it can be eaten the next day okay.

cooked sushi? What types?

You're probably okay to leave it out for 1 or 2 hours. I'm thinking that it may dry out if you leave it out too long. You can cover it with clear plastic wrap and expose what is needed a little at a time.

I would suggest putting stuff out as needed. If it's cold keep it wrapped in the fridge and bring out as the party platter dwindles.

Generally in professional food service, you want to keep cold things cold (on ice) and hot things hot (steam table, crock pot, gel burner). I would think people would get turned off with sushi sitting out for a long time such as anything over 2 hours.

I wouldn't think that long, in my experience, fish tends to go bad within 1-2 hours after being left at room temperature, cooked or uncooked. It doesn't have very long shelf life unpackaged ^^;
