Can I bake pies two days early?

Today is Tuesday. Can I bake an apple pie and a blueberry pie today and still have them be good for Thanksgiving on Thursday?

    According to the Food Network website:

    Two days ahead, make pumpkin pies or pumpkin cheesecake, rolls, breads and cornbread for stuffing. Refrigerate pies; you can always warm things up again before serving. Apple or pecan pies don't do well in advance, though; the crust doesn't stay flaky and crisp. Fruit pies can be baked one day in advance, and left on the counter (covered) overnight. I always do my pies on Wednesday.

    Yes, you could but it could crack if it gets too jostled around. I would suggest you prepare the crust at time of actually baking the pie, because the crust will not take long to do. I am sure there are other items you could be working on instead, because there is so many things to do and so little time available. Are your veggies all cut up for the other dishes? ;) Best that your 'mis en place' is all done. English translation: Things in place. Enjoy, Steve

    It would probably be alright, but if you can bake them late tonight or Wed. sometime it would be even better. They taste so good when fresh! I'm baking Pumpkin Pie tomorrow (Wed.) in the morning..... Remember, lots of whipped cream makes everything taste better and covers any problems with the top crust!

    I know if you bake them the day before they are still good. However, I dont know about two days before. Can you make them two days early but bake them the next day?

    You can, but it might alter the taste. I suggest that you prepare it and freeze. Thaw it out about two hours before you all eat dinner and bake during dinner.

    Yes you can.. but you increase the risk that they will be eatin whilst you are not looking...... My mother once made this mistake with a cherry pie :-)

    All that was left was the crust....

    I certainly hope so, mine are already done, did them yesterday.

    What I do is cook them about 10 minutes less than required, then do the last ten minutes in the oven the day of.

    I know the apple will be good for a week.The blueberry if there's no egg should be great in the fridge.......

    No, stop being lazy. The pies must be super fresh.
