What does "take for granted" mean in these phrases?

It means to underestimate something.
The person had everything they could ever want in life, but they never appreciated until it was gone.

Take for granted is saying you felt it was a sure/guaranteed thing. If someone grants you a wish for example, its a done deal or definitely going to happen.
Taking for granted then means you assumed that a thing, event, etc., was going to occur without consulting with the facts.
Hope that helps.

I assumed it was guaranteed and I didn’t have to put in any effort to make it true.
I accepted it without any gratitude.
