When they eat.
My dogs eat every day when I get home from work. They have access to dry food at all times, but only eat when they are hungry. They have an active enough lifestyle though that they are in awesome shape. My little one sometimes runs into the kitchen for one kibble out of his bowl. Just one.
I fill the bowls when they get low and it usually takes two days or so for them to empty both bowls (one is very small and the other is a medium sized bowl). I wouldn't recommend trying this with any dog though. As the above made refernce to, some would eat themselves to death.

Most dogs would eat all day long if they could. Set up a scheduled feeding time (or times depending on the dog's age & condition) and feed them then.
My dogs toss their bowls at me at 9pm, which is their dinner time. I know they're hungry then :)
