Christmas Dinner?

I am in charge of cooking all the sides & desserts @ our family's Christmas dinner... I would really like to know another side dish for the meal. I am not interested in pre-made or box mixes or anything extravagant! They have all picked these foods, and I get to pick one myself. I have been to many websites, but haven't found anything I think sounds that great with what has already been picked!Help if you can, Thanks!

    Bacon Wrapped Pineapple Shrimp

    12 jumbo shrimp, deveined

    1/4 fresh pineapple cut into bite sized chunks or 1 (14-ounce) can pineapple chunks in natural juice, drained

    6 slices center-cut bacon, cut in 1/2 crosswise

    12 wooden toothpicks

    Heat a nonstick skillet over medium-high heat. Holding a shrimp, nest a chunk of pineapple in the natural curve of the shrimp then wrap bacon around the shrimp and pineapple and secure with a wooden toothpick. Wrap and secure all 12 shrimp then add to the hot pan and cook 3 minutes on each side or until bacon is crisp and shrimp are opaque and firm.

    I made these as a side dish for Thanksgiving. I made a bunch of them up and put them in a baking dish and covered them with foil. I put them in the oven on warm while I mashed potatoes, etc. and they were the hit of my Thanksgiving meal. They would go great with steak too!

    It looks like you already have a starch picked out (the potato casserole), so another vegetable side dish is probably the way to go. You can try glazed carrots. They're sweet and delicious and really easy to make. Roasted onions can go very well with steak and are super easy as well. I also like to do sauteed brussel sprouts, tossed with bacon and shallots. Delicious. Asparagus can be a simple and classy choice - simply toss with a little olive oil, freshly ground black pepper and kosher salt and roast until tender/crisp. Finish with a little fresh parmesan and serve.

    As for desserts, it seems that you've got nothing but cookies. I think a good cheesecake can be a fabulous and easy dessert, especially when topped with fresh fruit (glaze the top with a little melted jelly, arrange your favorite berries and sliced fruit on top and then glaze with more of the jelly to keep it in place). It looks professional and tastes fantastic. Or you can drizzle the top with chocolate ganache for the chocolate lovers.

    You didn't mention any kind of appetizer... You could try a simple antipasto tray, maybe. Or fresh fruit wrapped in prosciutto (or good spanish jamon)? Hope this gave you some ideas!

    instead of just plain old green beans try making a green bean casserole. you simply take can greened beans (or cooked fresh ones) (you can also add some asparagus if you like) and add cream of mushroom soup undiluted top with the french fried onions and bake it's simple quick and good. a friend of mine cooks an asparagus casserole with rice and cream of mushroom soup all though i don't have that recipe i believe you can get it off the cans of asparagus you get at the store. if you go to recipe websites a lot of them have holiday recipes. make home made marshmallows (which you can get off of those sites also) and they are actually fairly easy to make and have hot cocoa. i made some the other day and topped them with green and red sprinkles. everyone ate them as a treat you can even cut them into shapes with cookie cutters.

    How about Baked beans or cole slaw with steak! Maybe sauteed onions or mushrooms?

    How about a really good tossed salad. That always goes well with a steak dinner.

    I usually have yams on Christmas . Maybe make a corn pudding .
