Anyone have any decent recipes for Tom and Jerry Batter?
Tom and Jerry's are a classic holiday drink. I've always bought a commercial batter under the brand name "Connellys", but can't find anyone who sells it where I'm living now. The batter is mixed with rum, brandy, and boiling hot watter - served with a candy cane hanging on the side of the mug, and topped with nutmeg. I know the batter is made with eggs, sugar and some spices, but I have never been able to duplicate the taste of the stuff I used to buy. If anyone has a decent recipe, you'll get 10 points!

TOM AND JERRY BATTER
12 eggs, separated
1/2 tsp. salt
1 lb. butter, at room temperature
3 lb. powdered sugar
1 tsp. vanilla, rum, or brandy flavoring
1 tsp. nutmeg
1 tsp. cloves
1 tsp. allspice
Beat egg whites until stiff; add salt. Beat egg yolks until light. Cream butter and powdered sugar; mix until crumbly. Add egg yolks and vanilla; mix well. Add spices. Add egg whites; beat until well blended. Will keep several weeks in refrigerator. May be frozen, if covered. Use 1 heaping tablespoon of batter for each Tom and Jerry.
6 eggs, separated and room temperature
2 1/4 cups superfine sugar, divided
Salt to taste
1 teaspoon vanilla extract
1 cup powdered milk
Boiling water
Rum, brandy, or whiskey
Nutmeg
In a small bowl, beat egg yolks until thick.
In a large bowl, beat egg whites until stiff peaks form. Fold 1/2 cup sugar slowly into whites. Fold beaten egg yolks into the egg whites. Add remaining 1 3/4 cups sugar, salt, and vanilla extract. Gradually stir in powdered milk. Store, covered, in the refrigerator, and use as needed.
Make each individual serving in a large cup or mug:
Place 1 heaping tablespoon of prepared Tom and Jerry batter into each cup
Add boiling water to fill cups to 3/4 full
Add 1 to 2 ounces of either rum, brandy or whiskey to each cup (use the amount of liquor you desire - for children, leave the liquor out)
Stir until well blended
Sprinkle with nutmeg
Serve
