By Spanish do you mean Mexican. If you are Hispanic here is something new. Go for the traditional mariachi musicians. The wedding dress can be traditional, the food make it asado,rice,beans, carne guisada and other traditional foods. As for locations try Mexico city, Cancun, Belize, or Juarez.

Take a trip to a remote part of Spain or one of it`s islands, there is always a wedding on some street most days and you get invited as they are so friendly. It would be a good idea that only Spanish should be spoken on your wedding day, send out phrases with your invitations for your guests to learn.
