If you mean that you have a Silpat or similar, the writing should be facing you (the shiny side up) I wouldn't give up my Silpats for anything.......Enjoy your baking and the holidays!!!!!!!!

I would disagree. I have several silicon pans that I use daily for cooking and all of them have a very shiny smooth surface on the inside to prevent the food from sticking. Generally the outside of the pan is very dull and rougher then the inner portion. I do admit that I do NOT have a silicon cookie sheet but all of my silicon pans (Bundt Cake, Muffin and Loaf pan) are all as I described above.
