What you probably want is called red eye gravy. That's the old south standard. You use drippings (usually ham but some use bacon) and coffee for the liquid. You can Google for exacts but basically it's an art as in any gravy.

I can answer for the gravy but I make box grits its easier.. if you are making it for breakfast fry your bacon then you drain the grease out of the skillet not all depending on how much gravy you want to make depends on how much grease you need to use. I will tell you for two people. OK you have drained the excess grease now you will put the skillet back on the burner and ad flour salt and pepper. you have to do this at a fast pase. just enough flour to make a past but not clumpy it should cook and still have bubbling. then you get your milk turn your fire down to med. then you will add milk to the thickness you prefer. Have your whisk handy when it starts getting a little thick take it off the burner that should do it. now this recipe is for cream gravy.

No instant grits!
For grits, follow the package instructions. Milk gravy is made with equal amounts of bacon grease & flour, browned into a "paste". Add milk, stirring mixture until you reach the desired consistency. Use an iron skillet. I don't follow exact amounts, but practice with a couple of Tbs of grease & flour, add milk, slowly simmer until mixture thickens.
