I see some of my suggestions have been mentioned, I'll jsut re-iterate a bit ;)
Lord of the Rings series (Esp Return of the King)
New Star Wars movies
The Matrix Movies, esp first one.
New War of the Worlds
Saving Private Ryan
Essentially, you can depend on good sound in almost any Spielberg movie. (In this post, there is 2, and I could name more)

I would suggest a great action movie. If you can get the original Star Wars Trilogy, I think that is in 5.1. Another good one would be the Blade Series, or the Fast and the Furious. Basically, anything that will get you're blood boiling will be a million times better on a 5.1 sound system.

I agree with the gentleman that said go for anything that has DTS. Just make sure your surround system is compatible with DTS surround sound.
As far as movies: Saving Private Ryan. You hear the bullets coming from one way to the other, as if you were actually there!! The bombs, the airplanes, the people screaming in the background. everything sounds awsome on DTS.

It's an oldie...but the best movie in surround sound would be Twister with Helen Hunt. I love that movie with SS. It makes you feel like you are in the middle of the storm.

Constantine was surprisingly good for sound separation, teh Matrix(es), Pirates of the carribeans 2, War of the Worlds (remake).

Try Titanic. It won the Academy Award for sound-effects that year. You can hear the steel creaking and groaning and snapping from one side of the ship to the other.

Cars! I know it's a kid movie but you can really hear those race cars flying around your room.
