    Good question! Here's a try.

You shut up because one is yapping away and one's mouth is open while continously talking. So you bring your jaw up? Guess so.

You quiet down because one is supposed to LOWER the volume of your voice.

when you start shouting, your lower jaw drops open most often, so you gotta shut up, likewise when you want to quiet down, i guess you will have to sink your head so that your upper jaw comes down to meet your lower jaw... so you quiet down...oh my god...this is a cracker...ROTFL LMAO...i think i need to calm down a bit now....

because if you quiet up, then your voice should be increasing but we really want it to decrease.
