The best char siu in town, in my opinion is "Dynasty" but it is in a 5 stars hotel, so... I suggest you to pick the second best which is "Joy Hing" in Wanchai, it has more than 40 years of history, Tel : 2519 6639, Add. 265-267 Hennessy Road Wanchai. Joy Hing is very crowded from 12:00 noon till 2:30 p.m. A dish of Cha Siu rice is only HK$19
As for dim sum, I only know the expensive place because the ingredients of making dim sum should be very fresh and all of them should be prepared soon after you place the order. You may go to a very old Chinese Tea House in Central, Lin Heung Tea House, wtih nearly 60 years of history and they still serve customers in their old way. You can their real "authenttic dim sum" but you have to suffer "long waits", "table sharing" and "classic Chinese-style tea service" + you have to chase quickly after the carts in order to get your dim sum. Truely I like Lin Heung because my grandfather used to go there every morning. Their lotus paste bun is very famous, and pig liver siu mai also is very traditional and you can't find it in modern Yim Char restuarants.
Big steamed bun is real big and with lot of ingridients in it.
