Boil beans on a high heat for 10 minutes - why?
On many dried bean packets, the instructions are something like:
soak for 8 hours
boil vigourously for 10 minutes
simmer for 30 minutes
Why the boil vigourously for 10 minutes? The water is the same temperature as if you were to simmer it instead

It is to try to introduce the full heating effect into the beans (They were cold) as quickly as possible, hence maintaining full thermal pressure by rapid boiling.
Also because when you first place the beans into the pot, they are cooling the water.

When water is boiling vigourously it's temperature is 100C. When it is simmering very gently, it's temperature can be below 100C so probably not hot enough to soften the hard outer skin of the beans.

Damned if I know. I always clean them, soak them for 8 to 10 hours, drain them, then put 'em in a crock-pot for 10 to 12 hours with enough water to cover them and a couple of finely diced onions for some extra flavor.
