Always looking for fast, easy recipes?

I am a single mother of 3 and find that at the end of the day, the last thing I want to do is slave over the stove. However I like to prepare foods for my children because it saves money and its better for them. I dont like the tv dinner or chef boyardee thing, so anyone know any good, fast and easy recipes that the family will enjoy?

    Get yourself the Cooking Light magazine. They have tons of good receipes.

    Here's one of my favorites:

    Boneless breast with a crunchy topping.

    Put a mixture of honey and giner (sm. amount of ginger, or none) on top of the breast while it's in a baking pan. Then take a handful of Special K and crush it in your hands while you sprinkle it over the breast.

    Bake 350 for 40 min. depending upon how thick the breast is and if it's thick, you can slice the breast in half (butterfly) and cook it for 30 min.

    Bake a potato for each of you in the micorwave and then when it's done, just put it in the oven with the chicken.

    Steam some brocolli...or other greens and you'll have a great meal. The kids will love the chicken.

    Another quick chicken dinner my husband loves, is bake the chicken with spaghetti sauce on top of it, and ten min. before it's done, sprinkle mortzerlla cheese on top and put back into the oven. Serve with spaghetti and sauce.

    Oh..my other quick fix, is boil about 6 bags of Minute rice some morning. When the rice is cooked, put them into freezer bags and freeze the pouches. Buy some frozen mixed veggies too, like peas & carrotts...and some Kokimein's (sp) soy sauce. When it comes time to have rice as a side dish, pull out 2 bags (for four people) of rice and put some butter in a hot fry pan. Then break a couple eggs and scramble them up, add the rice, add the soy sauce to your desired color and a hand full of the frozen veggies, stir until well blended and hot, use more butter if it starts sticking. I do this over med/high heat. Takes about 10 min. to make this. Simple and everyone will love the Japanese rice dish.

    I also make shrimp scampi pretty fast, but you could use chicken too. Boil some fine spaghetti while cooking up in a fry pan, butter, garlic, chicken/shrimp and when the meat is pretty much cooked, add some white wine, about 1/4 of a cup or more and near the end, add some bread crumbs to the desired thickness of your sauce...and then I add some cheese too, parm or mort. Garlic bread and a salad complete this meal. (I really don't like the oily type of scampi you get at a restaurant, so the breadcrumbs turn this dish into a better tasting and looking dish, in my opinion).

    Yummmy. I could go on, but like others above me have said, use the web site "all recipes" and get a subscription to Cooking Light. You'll be all set for months this way.

    Good for you that you're cooking for your kids instead of sticking them with canned foods. Way to go mom! Have fun watching them grow.

    i get so busy during the week. so sometimes i make healthy dishes and freeze them.

    if all else fails, always keep a pie crust on hand.

    4 eggs

    1 cup milk

    1-2 cup any cheese

    1-2 cup any filling (spinach, ham, mushrooms, anythingin the fridge)

    1 med onion.

    salt and pepper

    i cook the filling. cool add the cheese. mix the eggs and milk

    add salt and pepper to taste. throw everything together and put in pie shell

    bake 350 fo 45-60 minutes.

    i usually serve this with salad.

    Sweetie,here are a few.

    This first one is a side dish.

    Cheesy Corn

    1 (10 ounce) can whole kernel corn, drained

    4 ounces Cheddar cheese, shredded

    1/4 cup bacon bits (I eliminated this as i dont eat meat)

    1/4 cup milk

    1/2 teaspoon salt and pepper

    In a baking dish, combine the corn, cheese, bacon bits, milk, and salt and pepper.

    Place baking dish, uncovered, in a cool oven. Then turn the oven to 400 degrees F (200 degrees C). When the oven is fully heated (about 10 minutes), remove the dish, and stir vigorously, until the cheese and milk make a sauce.

    Return dish to oven for 5 minutes.What kid doesnt love cheese?A way to get them to eat vegetables!! I got this recipe from www.allrecipes.com.I have made it,as i love to try new dishes.They have the best.These are just a few i have actually tried.

    Ok,here is another recipe that they can get involved with:

    Mexican Pizza

    1 (16 ounce) can fat-free refried beans

    1 cup salsa

    2 plum tomatoes, diced

    1 (4 ounce) can chopped green chilies, drained

    1/2 cup chopped green peppers

    1/4 cup chopped onion

    1 cup shredded low-fat Cheddar cheese

    12 Quaker® Salt Free or Lightly Salted Rice Cake (I used corn tortillas for this.I bought them had nothing to do with them,wasnt sure what to make.I was browsing along allrecipes and i stumbled across this.

    Heat beans and spread over Quaker Salt Free or Lightly Salted Rice Cakes.

    Layer with salsa, tomatoes, chilies, green pepper, onion and cheese.

    Garnish with low-fat sour cream, if desired.

    You can allow them to get involved making a regular pizza.Odds are if they make it,they will be more likely to eat it.

    Not tried this one,but im sure any kid would love this.

    Popcorn Cake

    1 cup butter

    32 large marshmallows

    16 cups popped popcorn

    1 cup gumdrops, no black ones

    1 cup chocolate covered peanuts

    1 cup candy-coated milk chocolate pieces

    Melt the butter and marshmallows in heavy pan over low heat. Stir often.

    Put popcorn in a large bowl and pour marshmallow mix over top. Stir well to mix. Add the candy and nuts, and mix together. Pack into a greased 12-cup bundt pan. Let set till cooled. Turn out onto a plate to serve. Cut in wedges.

    I have not tried to the following recipe neither.Looks kid friendly to me!

    Southern Skillet Dinner

    2 pounds ground beef

    3 (15 ounce) cans sliced potatoes, drained

    2 (10.5 ounce) cans cream of mushroom soup

    1 (10 ounce) can whole kernel corn, drained

    1 (10 ounce) can peas, drained

    salt and pepper to taste

    Brown beef in a large skillet over medium heat. Drain fat, and return skillet to stove. Stir in potatoes, cream of mushroom soup, corn, and peas. Sprinkle with salt and pepper. Cover, and simmer over low heat for 10 to 15 minutes.

    Guess that would be more practical than looking for fast, easy women. Maybe I should invest in _the Joy of Cooking_.

    try this... VERY, VERY YUMMY... taco salad...

    you will need:... you can double or triple the ingredients for the amount of people that are going to be there...

    1 lb of ground beef

    2 cups shredded cheese... i use krafts mexican cheese mix...

    1 packet ortega taco seasoning

    1/2 head of lettuce shredded

    2 tomatoes... completely optional...

    1 bag of doritos nacho cheese tortilla chips... crush 'em...

    salsa... optional... to be put on the side for an optional topping

    sour cream...optional...to be put on the side for an optional topping

    you want to brown the beef in a frying pan... on medium heat... following the directions on the taco seasoning packet... in a large salad bowl... mix the lettuce, crushed doritos, optional tomotoes... after the beef is cooked turn off stove, add the cheese, then once the cheese is mixed, put the beef and cheese in with the salad mixture... put some extra cheese on top... and serve with the salsa and sour cream on the side... for those who don't like either...

    If you can invest in a slow cooker. you can make up the food the day before, go to work and 8 hours later you will have a hot meal waiting for all of you.
