Good and easy vegan cookbooks?

Question

Hello,

I am looking for a recommendation for a good vegan cookbook for beginning cooks.  I want something that is easy to understand and basic with good recipies that don't require a million hard to find ingredients.  Any suggestions would be greatly appreciated!

I would say this is an easy cookbook with a nice variety of recipes. Great for a beginner.
