I find it hard to answer this question without being in your kitchen and seeing what you have in your fridge. The link below will let you put in the ingredients you have or want to use, and give you recipes that meet your needs. Some are healthy, some are not. It just depends on what you have in your kitchen

cut up veggies - zuchini, carrots, onions, potatoes, peppers, whatever you like- saute with olive oil and balsalmic vinegar (potatoes would take longer than other veggies so put those first if you want them), you can also add chicken which you could even buy already cooked at a deli- whole foods sells good cooked chicken. eat just mixed like that when they are done or put ina tortilla. it takes like twenty minutes total and its really good. its actually the only way I got my boyfriend to eat vegetables (he usually wont eat anything green) and he actually loved it.
or make a veggie sandwich at home- whole wheat bread, cucumber, tomatoe, avacado is my fave
bertolli raviolis and sauces are good- you just have to cook the pasta. I got some at safeway for like $5 and it made three meals worth for me

Check out kraftfoods.com. They have tons of easy and healthy recipes and all the ingredients are easy to find. Here's one of my favorites:
Cheesy Chicken and Vegetable Bake
Prep Time: 10 min
Total Time: 40 min
Makes: 6 servings, about 1-1/3 cups each
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup hot water
1-1/2 lb. boneless skinless chicken breasts, cut into 1-inch pieces
1 can (10-3/4 oz.) low-fat reduced-sodium condensed cream of chicken soup
1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1-1/4 cups KRAFT 2% Milk Shredded Reduced Fat Mild Cheddar Cheese
1 bag (16 oz.) frozen mixed vegetables, thawed, drained
PREHEAT oven to 400°F. Sprinkle 1/2 cup of the dry stuffing mix evenly on bottom of 13x9-inch baking dish; set aside. Add hot water to remaining stuffing mix; stir just until moistened. Set aside.
PLACE chicken over dry stuffing mix in baking dish. Mix soup, sour cream, cheese and vegetables; spoon over chicken. Top with the prepared stuffing.
BAKE 30 to 40 min. or until chicken is cooked through.
