What menu would be a nice simple elegant meal for Easter?
Something that wont take all day and for a group of about 7 people?

Baked ham with brown sugar glaze, sugarsnap peas, spring greens salad with grape tomatoes and an orange vinaigrette, brown and serve rolls with butter, boiled baby red potatoes with rosemary, and custard pie. That's what I'm going to do! The ham doesn't take long, and the rest I can throw together in a snap. If you want a little more food than that, bake some yams while the ham is in the oven, and serve a soup. Campbell's has a great oyster stew that I serve all the time, and people just love it! If you still need more, add carrots in brown sugar and butter, or even serve danish or cinnamon rolls before the meal.

Get a ham shank from the store, about $16.00 and bake it. Get small red potatoes and cube them, place them in a zip lock bag with a few dabbles of oil and add one packet of onion soup mix, shake and place in a baking dish at 400 for 20 minutes. Take canned peas and simmer over low heat adding a bit of bacon to the mix and a touch of garlic power and paprika, you can use french style green beans too, but the uniform of the peas is nice. Buy a bag salad Ceasar and large croutons, and wa la.....

Honey ham, potatoe salad, deviled eggs, scalloped corn, or baked mac and cheese for people who dont like potatoe salad, glazed carrots, rolls, simple white cake for desert, at least that's what I'm making for 10.

Baked ham with red eye gravy, mashed potatoes, candied sweet potatoes, green salad. Some kind of light dessert, like jello or pudding.

We are having Honey Baked Ham, green beans with potatoes and bacon (from a can), and corn (frozen) and rolls.
Dessert is strawberry shortcake.

If you have kids or grandkids coming over, I would just make Mac' and Cheese and add food coloring so it would look fun to eat.

Coconut cake for dessert.
Red wine and coffee or espresso.
