i recently go back fromm a tour of Spain: Madrid, Barcelona and Granada. for the first 2 cities, i had a lot of success with a site called: http://www.holiday-velvet.com/
they have many apartments and hotel options for Spain and it seems for several other cites. the page is quite user friendly and extensive....good luck!
