Low-Carb. Recipes?

I have looked up online for recipes and have found some but I would like to get other peoples creative ideas for low carb breakfast, lunches and suppers.

They can be simple and quick or ones that take a little bit longer to make. Thank you in advance!

    1 part Jack Daniels and 3 parts Diet Coke; the only low carb recipe you need.

    Cucumber Sandwiches

    Ingredients:

    4 tsp Butter

    2 Mint leaves

    ½ Green Chilli

    10 slices Bread

    ½ tsp Black Pepper

    20 slices of Cucumber

    Method:

    Mince the mint leaves very fine.

    Add the black pepper with minced mint leaves and chilli to butter.

    Mix thoroughly and apply to bread slices.

    Place cucumber slices in between the bread slices to make a sandwich.

    Remove the edges and cut diagonally to get triangles.

    Garnish with a slice of orange and fresh mint leaves.

    Serves 5

    Yoghurt Salad

    Ingredients:

    ½ tsp Salt

    1 ½ cups Curd

    1/3 cup Sultanas

    2 tsp Clear Honey

    ½ cups Cashewnuts

    16 White grapes, halved

    2 Spring Onions, chopped

    1 tsp Mint leaves, chopped

    2 Medium Carrots, thickly sliced

    1 ½ cups Cabbage, finely shredded

    Method:

    Using a fork, beat the yogurt in a bowl with the clear honey.

    Mix together the carrots, spring onions, cabbage, sultanas, cashewnuts, grapes, salt and chopped mint.

    Pour the curd mixture over the salad and blend everything together.

    Transfer to a serving dish and garnish with the mint sprigs, if wished.
