I just follow the recipe on the back of Nestle's Choc. chips! They turn our great every time! Oh, I also started using a Silpat liner on my cookie sheet! That helps a lot with even browing on the bottom of the cookies. They run about $15.00 - $20.00 but are worth it!

Buy the "cookie vanilla"-you can find it in the grocery store.

Also -when I first started making them this was a big mistake of mine.....I kept rotating the cookie sheets BUT..I didn't let the sheet cool off enough before I put the next "drop" of cookie dough on it. Hence, I just kept ending up with these flat choc chip cookies. I couldn't figure out why. DUH!!

They were just melting and spreading right out on that warm cookie sheet. Ya know, I still don't get mine real big and almost round like some people do, but at least they don't look

like pancakes anymore. And the Vanilla, makes a big improvement! It is not imitation vanilla, so it is not cheap. But way worth it!!! -

I am sure there are millions of tips!!! Those are my two : )

  • You just need the right recipe. It took me about 10 years to find the right one and I have NOT used another since - I just made them for a work function tonight and they were the first to go!

2 cups butter or hard margarine

    1 cup brown sugar

1-1 1/2 cups white sugar (dependingon your add ins and your tastes)

    4 eggs

    2 tsp vanilla

    4 cups flour

    2 tsp baking soda

    1/2 tsp salt

1 1/2 cups stuff (chocolate chips, nuts, raisins, skor bits, your fave broken up chocolate bar, whatever you like!)

Beat butter, add in sugar, beat again. Add eggs and flavoring. Slowly beat in flour mix and stuff. Scoop onto pan (I use a cookie scoop, makes life so much easier), bake at 350 for 10 minutes. They will look a bit underdone but that's ok - that's what makes them so chewy!

Variation - Use 3 cups of flour and 1 cup of cocoa for chocolate cookies. Add in crushed peppermints, white chocolate, chopped caramels, more chocolate chips, whatever you like again!

This recipe has the PERFECT balance of flour to butter - that is the trick!! Once yo use this recipe, you will never look back!

Also pans are crucial. I use heavy aluminum ones from Paderno and have not burnt a cookie since!!

Source(s): I now have contracts to make these they are so popular! I'm not even a professional baker!

Use a soemthing beside vanilla extract. I use light brown sugar. I have some clear Mexican Vanilla it make the dough lighter in color. I usually make a quad or triple match of dough and only use double the chips and add coconut flakes. After leaving the made dough i put in the fridge for a 1 1/2 hours and use a small coookie scoop so they are easier to manage.

Source(s): been using same method since 1980

Are you asking what ingredients you could maybe use to improve them? Use butter, try putting chopped pecans in the cookies, use really good quality vanilla, and have your eggs at room temp., it makes a difference when baking! Also, you could try using milk chocolate chips instead of semi-sweet chips!
