all of what you ask depends on what you are trying to do and what type of iron or steel you are working with. in general you determine the malleability by the color of the heated material it takes some experience to know . iron or steel is workable at about 1800 degrees bright yellow orange red about 1500(toocool) white at 2000(too hot) after forming return to heat bring to cherry red for tempering. Best to use oil for cooling if you are case hardening to achieve carbon transfer to metal. after drawing from heat rasp off slag watch for color change in steel you will see astraw yellw color appear in the metal then dip inoil for hard steel. all this takes practice and time to learn
