literally, it means " if on the way, death surprises you and you're riding a donkey, you're in luck"
I don't know what it means figuratively, I am Spanish but I have never heard it before.

If you're riding a donkey when the death arrives to you on the road, you're lucky.
It means that being poor (riding a donkey, not a horse) you have less to lose when your last day arrives.
You accept death more easily if you have less to lose. - i.e. supposedly, the poor die happier than the rich.
