    Pizza Salad Pita Pockets recipe

3 (6-inch) white or whole wheat pitas

    6 leaves romaine lettuce

    8 cherry tomatoes, halved

    1/2 cup chopped red onion

    1 cup sliced mushrooms

1 ounce pepperoni slices, cut in half

    1/2 cup pizza sauce

1/4 cup grated low-fat mozzarella cheese

    3 tablespoons red wine vinegar

    1/4 teaspoon garlic powder

In a medium mixing bowl, stir together the cherry tomatoes, red onion, mushrooms, pepperoni, pizza sauce, mozzarella cheese, vinegar and garlic powder. Warm in the microwave for 1 minute.

Cut each pita in half and warm in the microwave, about 30 seconds. Stuff each with a lettuce leaf; fill each pita with the pizza salad and serve.

Beans on toast. They are pretty healthy.

Penguin surprise. The surprise is that the penguin is 12 feet high and has electric tentacles.

Minimal pizza. Just a base. Uncooked.

Pizza a la Star Wars. Pizza cooked by laser rifles.

and of course, cheesy peas. Peas, microwaved with grated cheese. For 5 hours.

    Chilli or curry Pitta Pockets

Just make a Chilli with minced beef or a curry with minced lamb and spoon the mixture into Pitta breads which have been warmed and cut in half.

I generally but peas/yougurt/dash of mint sauce in the curry mix.

Put sliced cucumber and pieces of sliced red onion in with the mixture....it is delicious, but gets everywhere so sit at table or have bibs ready.

Rice and vegetables are quick and easy to make and you could open a tin of Tuna or Salmon and toss in, with some lemon, lime or orange zest.
