Highway 1/101 Road Trip (San Francisco to San Diego)?

I'm taking a road trip with a friend in December down the coast on Highway 1/101 from San Francisco to San Diego. We have 8 days, but we're spending the first 2 nights in Mendocino, then heading South from there.

I'm looking for any MUST-SEE places to stop along the way, as well as places that might be cheap and good to stay overnight each night.

Anyone who has done this trip before, please tell me your thoughts and ideas!!

THANK YOU IN ADVANCE!

san Luis Obispo, santa barbara and maybe solvang are the only other interesting areas along the coastal route that you haven't been to. SLO is approximately halfway point between SF and SD.
