Vegan Cupcakes Take over the World?

I just got the book yesterday, and I promised my friend who bought it for me that I'd surprise them with cupcakes.

Well he as well as 2 other friends and a parent are going to Cornerstone (a big concert thingy) that is 6 hours away. I decided to make them cupcakes because My friend is vegetarian and the others are trying it for the week. I thought vegan cupcakes on the trip up would be nice. Now they're all 16 and 17 and the dad is like 40something. Do you think 12 (3 per person) is good or 24(6 per person)?

Next question. Can I take these recipes and just make a cake instead? (Because it is a birthday party thing and I thought a nice vegan cake would be lovely.)

I'm going grocery shopping tonight so if answers could be in soon, that would be more than amazing. Thank you.

Update:

They're going to be in a car for 6 hours, I was going to save the cake for after the trip and give the cupcakes on the trip. And the whole book is Vegan, so I have the icing too.

Update 2:

I chose to make 36 instead, that gives them a lot to eat, and 3 flavors to pick from. Tell me out of this list which sounds best:

Peanut butter cupcakes

Maple syrup cupcakes

Banana split cupcakes

Orange pudding cupcakes

Much Margarita cupcakes

Golden Vanilla with Choclate Mousse cupcakes

Chocloate Mint cupcakes.

I don't see why your couldn't use the recipe to make a vegan cake.

As far as the portions 3 per person is usually a great size. If they want more later you will know they were a hit.

Also maybe you could pass that recipe along to me.

I agree that that is a LOT of cupcakes to make. Maybe make some cupcakes AND some bran muffins

Here'a good recipe I make often (get creative - I add a ton of walnuts and make them mini mufifns): http://shmooedfood.blogspot.com/2007/02/full-meal-...

Or just make one nice batch of cupcakes and don't go overboard. They might not want to take a gagillion cupcakes with them. 12 would be PLENTY. I'd be overwhlemed if someone brought me more than that.

I bought that book and haven't tried any of the recipes yet. I hope it goes well for you. They sure sound delicious! Be careful. Your friend may fall in love - you know what they say about the way to a man's heart...

I guess it depends on the people, the non-vegetarians might be expecting something more that tastes more like it came from a box mix. My daughter made vegan cupcakes (i'm not sure of the recipe) and I thought they were muffins. I did like them, but didn't realize they were cupcakes. She also made a vegan cake (again not sure of the recipe) I thought it was good, it seemed like she spent a lot of time. Some thought it wasn't that sweet. Make a trial one first.

Cupcakes are best for a car trip - not cake. Six person would give you some for the way home too -

    Source(s): Love those cupcakes

    Peanut butter cupcakes

    Banana split cupcakes

    Chocloate Mint cupcakes.

Those would be my three picks.

You are making an insane amount of cupcakes. No one really needs three cupcakes in one day? I hope they turn out great though!

I would make the cake instead and make a vegan frosting with it.
