How do I transfer a cheesecake off the pan?
What's the proper method for transferring a cheesecake off the springform pan's base onto a platter or cake board?
I usually use crumb-crusts, which break when I try to slip it off the pan. Chilling and using greased parchment paper or aluminum foil just doesn't work!
I usually just serve it off the pan when eating at home, but sometimes friends request cheesecakes off me, and I can't give them my pan! Disposable tins will work for tarts and pies, but for cakes it lacks presentation.
Can someone help? :O)

My stepson makes cheesecakes for everyone in the family for Christmas presents. He gets coated cardboard rounds from the cake store that fit inside the springform pan. They lift right off the springform base.
You could save some cost by cutting the cardboard (heavy, like a shipping carton), and cover it with parchment or foil. Enjoy!

After you've removed the side of the springform pan, put the cheesecake in the freezer for an hour. That will get it firm enough without ruining the texture. Don't leave it in longer than an hour, though!
Then remove it from the freezer and use a knife to separate the cheesecake from the pan bottom. Slide it carefully onto a plate or a foil-wrapped piece of heavy cardboard.

Spring form pans leak. When baking in a water bath (bain marie) always wrap the bottom in plastic wrap and then foil. I also line the pan in butter then parchment paper and the cake will slip out easily. In your current situation the base of the cake may be a total loss. The only thing you can do at this point is run a long carving knife under the cake to loosen it from the base. Use two large lifters/palette knives to lift the cake and slide a clean cake card or plate underneath the cake.

spray non stick cooking spray on the pan prior to adding mixture. Also wait until its cooled down, and it firms upplace a sheet of waxed paper ontop of the cake and flip it over, pull the bottom of the pan off, and flip it back onto the plate.

I generally use a piece of kitchen twine and kind of saw underneath the crust. Then I carefully scoot it onto my serving plate.
