    There's always tomato pie:

Layer slices of tomato, shredded cheddar cheese and mayonaise in a pie crust. Top with a vented pie crust to release stem (just as you would a fruit pie), bake according to the crust directions.

Stewed tomatoes, with or without onion, celery and carrots. Boil on the stovetop and just before serving, add a good handful of crushed saltine crackers. My gran used to serve it.

Then there is tomato jelly: make like any other jelly but use strained tomatoes instead. Gran also made that. I miss her, my gran. . .

    Tomato Borscht

1 1/2 lbs cubed stew meat

    2 onions chopped

    4 carrots chopped

    3 ribs celery chopped

    3 lg tins stewed tomatoes

    2 cans beef stock

    1 head green cabbage chopped

    1 tbl salt

    1 tbl pepper

    2 tbl dill seed

Dust beef with flour and brown. Add remaining ingredients and simmer on lowest heat for 3-4 hours. Cabbage will cook down considerably and can be added in batches to make room in pot. Serve with optional dollop of sour cream.
