Vegan Food Help?
Well my friend is wanting to turn vegan and I am one.
She said she really wants to but the recipies seem hard.
Does anyone have any simple fast ones?

Congratulations to you and your friend!
I lived off of these for the first couple of months:
-Tofu scramble- I'm sure you know how to do this one!
-Spaghetti- just add some chopped kale and some sautéd yellow pepper for calcium and vitamin c to pasta sauce from a jar- oh, and you can add fake meat to it, if you want
-Baked potatoes- poke holes with a fork into a washed potato and... bake it... My sister even microwaved potatoes because she's lazy. Top the potato with fake bacon... vegan cheese... whatever!
-pizza- basically just a pita shell or something with tomato sauce and vegetables on top; maybe some fake meat for protein, vegan cheese if you feel like it
-Fruit smoothies- if you're lucky enough to have a blender, that is!
-Hummus- another thing you'd need equipment for, but really... if I could live off of that stuff I really would. <3333
http://vegweb.com/ is really a great place to go and just browse the recipes. Youtube actually has some videos of people making really good vegan food- just search! If you go to various websites like veganoutreach.org and peta.com you can find good resources and you can sign up to get packages with stuff like stickers, dvds, and pamphlets that usually include a recipe or five. I'd also recommend getting "How It All Vegan" by Sarah Kramer- for dinner I had banana pancakes, thanks to her!

This is my laziest vegan recipe:
2 cups cooked brown rice (you can buy frozen cooked brown rice at some supermarkets, which makes this recipe even easier. Just heat following the package directions)
1 15 oz can beans, any variety, rinsed and drained.
1 large jar salsa
Mix all ingredients together in a casserole. Bake at 350 until heated (approximately an hour).
I work full time, and take classes at night during the school year, so this is my "fast food." I always keep some in the fridge so I can microwave a bowl full whenever I need to.
During the weekends and summers when I have more time, my favorite vegan cookbook is "Vegan Cooking for One" by Leah Leneman. Almost all of the recipes are fantastic. Most of them are easy to prepare and quick.

you can skip the recipes. here's a list of foods found at local grocery stores that are vegan. most of them are processed though (not extremely healthy-but healthier than eating meat!!!) so add plenty of fresh fruits and veggies.
