what can i make with squash? any recipes?

my fiance's grandparents gave us alot of squash. i really haven't made squash except fried it with corn meal. anybody know of a different way to make it? or have some really good recipes?

    Summer Squash Panini

    2 zucchini, grilled

    2 summer squash, grilled

    1 green or red pepper, grilled

    1 orange or yellow pepper, grilled

    1 loaf of focaccia or other bread of your choice

    marinade of your choice (sesame, ginger, etc.)

    1 - 14 oz. can artichoke hearts, cut into quarters

    Directions:

    1. Coat slices of zucchini, summer squash, and pepper with marinade and place on grill.

    2. If desired, grill the slices of bread lightly on each side.

    3. For each sandwich: spread some additional marinade on cut side of two slices of bread.

    4. On one piece of bread, layer a few pieces of each grilled vegetable, a few pieces of artichoke hearts, and top with another slice of bread.

    5. Repeat procedure for remaining sandwiches and cut each sandwich in half before serving.

    Squash Casserole

    1 ½ lb yellow squash

    ½ cup mayonnaise

    1 large egg, beaten

    ½ cup sharp cheddar cheese, shredded

    ¼ cup chopped onion

    1 tsp sugar

    ½ tsp salt

    ¼ tsp pepper

    1/3 cup dry bread crumbs

    1 T margarine

    Method:

    Cook squash in ½ cup boiling water 8-10 minutes.

    Drain. Mash squash. Stir in next seven ingredients. Spoon mixture into greased or vegetable sprayed baking dish. Sprinkle with bread crumbs. Dot with margarine. Bake at 350 for 35 minutes.

    Stuffed Squash

    1 acorn squash

    1 cup onions, diced

    1/2 cup walnuts, in pieces

    1/2 cup raisins

    1 tsp. cinnamon, grounded

    1/2 tsp. ginger, grounded

    1/4 tsp. cloves, grounded

    1 Tbs. margarine

    1 cup brown and wild rice

    2 cups water

    Directions:

    1. After cleaning the squash, cut in half along its length (top to bottom) and scoop out the seeds (save the seeds for roasting, if desired).

    2. Boil water in a covered cooking pot on the stove top; add the seasonings, margarine and rice; replace cover and reduce temperature to a simmer.

    3. Add remaining ingredients, and simmer until all water is absorbed into the rice.

    4. Remove from heat and mix thoroughly; replace cover and let stand for about 10 mins.

    5. Stuff the squash halves with the rice mixture; bake in a covered roasting pan at 350F for about 1 hour, or until the squash is tender.

    Squash is versatile. Here are some ideas:

    1. Slice squash into thin slices, lay on a baking pan, squeeze lemon juice over the squash and sprinkle some salt. Broil for 5 minutes. Serve hot or cold.

    2. Sauteed squash - cube the squash and sautee with garlic and butter or olive oil and some tomatoes and gree onions. Sprinkle parmasian cheese over it before serving.

    3. Squash bread - replace the zucchini with squash for a zucchini or squash bread

    4. Include squash in your pastas, sphaghetti sauce or dress up fettuccini

    Squash casserole is awesome. Cut up squash,place in greased cooking dish. Sprinkle stuffing over the squash and add butter. Cook for 40 minutes at 325

    You can boil some potatoes( cut up in chunks), after partially cooked , add chopped squash, a chopped tomatoe or 2, couple tbsps olive oil, lots of garlic, a little salt, dried basil and cook for about 15 min. over medium heat. After all ingriedients are cooked and most of the water has evaporated, add a sprinkling of seasoned bread crumbs and a sprinkling of grated parmesean cheese mix together till cheese melts about 5 min. Makes an excellent side dish.

    i cut them i half, clean out the seeds, place them in a baking dish, drizzle olive oil over both halves, sprinkle with salt, pepper, cayenne, and minced garlic. put a pat of butter or margarine in the hollow. add a little water to the bottom of the baking dish...cover with foil. bake at 350 for an hour, or until soft

    what kind of squash????

    Zucchini makes a great bread when shredded and added to recipe.......fried with bacon and onions...........cut in chunks and shish ka bobs on the grill............steamed over hot water

    yellow........fried with bacon and onions also.........chunked in a veggie basket over the grill with marinade sauce over it.....

    acorn/butternut squash..........scoop out inside and add brown sugar and butter when you cook in the oven.....YUMMY!

    You can slice it up and saute it with a little bit of oil and pick a some spices.

    stir frye(add in)

    boil it,drain and melt some butter & brown sugar

    goes great in lasagna.
