Garlic-green chili paste- where can I order this from the US?

It is used in Indian cooking; apparently a common ingredient, but I can't find it. I've been substituting a 50-50 mix of ground garlic and serrano chilis. Am I close?

It is really hard to find ready made garlic/green chili paste because the shelf life is short. Garlic paste is easily available but once green chilies are added, it will not last long even in the refrigerator. For a short cut, use ready made garlic paste and add fresh green chilies to that if you wish.

Indian green chili pickles last longer because they contain alot of oil, fenugreek (methi), salt.... all products you dont want in your paste.

If you can find Thai bird peppers, use the small green ones. The 50/50 mix is accurate unless you want to make the dish spicier --- add more chilies. If you cant find the little Thai/Indian chilies, serranos are the best substitute.

    Here's one from Asia - a recipe:

    Asian Chili-Garlic Sauce

    Ingredients

    2-1/4 qts cider vinegar

    22 oz honey

    2 cups green onion, chopped

    3/4 cup ginger, fresh, minced

2/3 cup Asian garlic chili paste or sauce

    10 oz sesame oil

    Method

In a large bowl, combine vinegar, honey, onion, ginger and garlic chili paste or sauce; stir to mix thoroughly.

Using a whisk, slowly drizzle in sesame oil while whisking sauce to combine. Sauce can be refrigerated for up to 2 weeks. Serve at room temperature. If sauce has been stored, whisk again just before service.

you may upload somewhat sugar to the paste, yet yet differently to do away with the extremely some spiciness is to serve your dish with something like a yogurt raita - that's yoghurt, salt and pepper, cucumber, mint and somewhat lemon juice. Dairy products frequently offset the warmth in chilli, and the freshness of the cucumber will help too.
