You are probably thinking of basketball, which has more three way deals nowadays than other professional sports because of all their salary cap crap (matching, dumping, etc). So there is a reason that it is done so often in the NBA.
It is done in baseball and other sports too, but not to the same degree since there isn't the same type of motivations.
There have been many notable three (or more) team trades in MLB over the years though! Often it is used in baseball when certain prospects are wanted in trades that also involve veteran players. It all depends on what teams want/need of course.

Indians Receive-Chone Figgins
Rangers Receive- Fausto Carmona
Angels receive- Mark Teixeira that would be a three way deal and you can do it in any sport but your probably thinking of basketball

Three-way deals are possible and not uncommon in all major professional sports.
