How can you make flavoured concentrates at home?

For example I have a lot of mint right now and I'd like to make my own concentrate. Is there a basic way to do this, and to do others as well, such as vanilla concentrate?

    Fresh Mint Sauce Concentrate

    1 lb sugar

    1 qt vinegar washed, finely chopped

    mint leaves

    Dissolve sugar in vinegar. Boil 10 minutes. Slowly add washed, finely chopped mint leaves. Keep adding leaves until the consistency of jam. Bottle in sterile jars. (The quantities may be reduced if you don't have a lot of mint leaves: by half or even to one-quarter.)

    To use: Put a spoonful if concentrate in a dish and add hot hot water to form sauce.
