I'm going to a pot luck party. What should I make?

I'm tired of going to pot luck parties with 5 pasta salads and 5 potato salads. Any suggestions? It's a family pool party with about 40-50 people. Budget not an issue.

    This is always a hit.

    2 cups cooked corn, fresh or frozen

    1 avocado, cut into 1/2-inch cubes

    1 pint cherry tomatoes, halved

    1/2 cup finely diced red onion

    Dressing:

    2 tablespoons olive oil

    1/2 teaspoon grated lime zest

    1 tablespoon fresh lime juice

    1/4 cup chopped cilantro

    1/4 teaspoon salt

    1/4 teaspoon pepper

    Combine the corn, avocado, tomatoes and onion in a large glass bowl. Mix together the dressing ingredients in another bowl, pour over the salad, and gently toss to mix.

    This cucumber salad is really good for this time of year. I'm bringing it to a potluck next week.

    Cucumber Salad

    4 1/2 Cups sliced cucumbers

    dress with

    1 Cup sour cream (light or no fat is ok)

    3 TBSP Sugar

    1 1/2 tsp salt

    2 TBSP vinegar or lemon juice

    1/2 med onion - grated

    Mix the dressing together and mix with the cucumbers.

    (Grating the onion is important, it really allows the onion flavor to permeate the salad.)

    Very easy to multiply.

    meatballs in a crock-pot and add cream of mushroom soup and milk, or instead of cream of mushroom, U can use, cream of chicken, cream of celery, with milk. I make these for every cookouts and are a big hit usually the first to go, another thing is:

    Lil smokies, cup of grape jelly, and cup yellow prepared mustard, mix together in a crock-pot and let the crock-pot do the rest, the heat will melt the jelly and make a sweet , tangy sauce . another item that goes fast.Make a big pan of lasagna and ppl can spoon out what they want. just giving U some ideas that I make for our BBQ, shepherds pie is another thing and the kids will love it as well.

    i like to make a big pot of chili when i know there are a lot of people to serve.

    1 lb of ground beef, 1 can of beans and 1 can of tomatoes will serve up to 10 people, so you can plan it accordingly.

    ingredients:

    ground beef

    beans of your choice (i usually use kidney)

    crushed tomatoes

    chopped onions (optional)

    a few cloves of garlic (chopped)

    salt

    pepper

    packet of chili seasoning (to make a larger amount, i'd add 1 packet for every 10 people)

    crushed red peppers, seasoned to taste

    brown the ground beef in a large pot, then add the beans and tomatoes and seasonings. stir frequently and simmer about 20-30 minutes (the longer you simmer it, the better it will taste).

    this is very versatile - it can go with chips, hot dogs, burgers, bread or just by itself.

    I got two recipes. The first one I saw on hte Food Network and then went there and printed it out. The second one's been in my family a while.

    Recipe #1

    Tuna Tartare

    INGREDIENTS:

    3 3/4 lbs very fresh tuna steaks

    1 1/4 cups olive oil

    5 limes, zest of, grated

    1 cup freshly squeezed lime juice (please not the bottled)

    2 1/2 teaspoons wasabi powder

    2 1/2 tablespoons soy sauce

    2 tablespoons hot red pepper sauce

    2 1/2 tablespoons kosher salt

    1 1/2 tablespoons fresh ground black pepper

    1 1/4 cups minced scallions, white and green parts (12 scallions)

    3 1/4 tablespoons minced fresh jalapeno peppers, seeds removed

    5 ripe Hass avocadoes

    1 1/2 tablespoons toasted sesame seeds (optional)

    PREPERATION:

    1. Cut the tuna into 1/4-inch dice and place it in a very large bowl.

    2. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot red pepper sauce, salt, and pepper.

    3. Pour over the tuna, add the scallions and jalapeno, and mix well.

    4. Cut the avocados in half, remove the seed, and peel.

    5. Cut the avocados into 1/4-inch dice.

    6. Carefully mix the avocado into the tuna mixture; so that the lime juice covers thewm. (To prevent discoloration).

    7. Add the toasted sesame seeds, if using, and season to taste.

    8. Allow the mixture to sit in the refrigerator for at least 1 hour for the flavors to blend.

    9. Serve on crackers.

    Recipe #2

    5-Star Sesame Noodles

    INGREDIENTS:

    2 lbs linguine

    5/8 cup soy sauce

    1/4 cup toasted sesame oil

    1/8 cup rice vinegar

    2-3 tablespoons grated fresh ginger, adjust to taste

    1/4 teaspoon cayenne pepper, adjust to taste

    3 tablespoons black sesame seeds, regular can be substituted

    1/2 bunch green onions, diced, green only

    PREPERATION:

    1. Cook linguine noodles per directions on package. Drain well.

    2. Combine next 5 ingredients and mix well with noodles. (I use gloved hands to do this).

    3. Mix in sesame seeds and most of green onions.

    4. Let stand for at least 30 minutes before serving and stir occasionally during this time.

    5. Sprinkle with reserved green onion for decorative purposes.

    There yah have it. Two great potluck recipes. If you want you can double everything in one of the recipes. The 5-Star Sesame Noodles would be easier to double.

    Macaroni Salad

    cooked pasta, diced onions,black olives, celery, green and red sweet bell peppers, chopped hard boiled eggs, cooked and crumbled bacon....a small amount of mayo (not miracle whip) and sour cream (add a small amount of sugar) salt and pepper to taste....you can add shredded cheese as well.

    Spaghetti Salad

    Spaghetti cooked, drained and cooled

    chopped onions, black olives, celery, red/green/yellow/orange peppers (for flavor and color) you could use pimento's (I do all the time), Italian dressing and then sprinkle with McCormick's salad supreme.

    You won't ever go wrong with BBQ baked beans.

    6 lg. tins pork and beans

    1/2 cup brown sugar

    2 tbsp's dry mustard powder

    1/4 cup molasses

    1/2 cup bbq sauce

    Drain off al the juice from the beans

    Place beans in crockpot

    Add the sugar,mustard powder,molasses and bbq sauce

    Mix well.

    You may want to adjust the amount of bbq sauce you use so go according to your taste.

    Heat on low for apprx.3 hours and serve.

    Seven-Fruit Salad

    • 1/2 cup lime juice

    • 1 pint blueberries

    • 1/2 cup water

    • 1 pint fresh strawberries, sliced

    • 1/2 cup sugar

    • 1 1/2 cups watermelon balls

    • 2 medium nectarines, thinly sliced

    • 1 cup green grapes

    • 1 large banana, thinly sliced

    • 1 kiwifruit, peeled and chopped

    In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2 qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour.

    Seven Layer Salad

    • 1 16 oz. bag salad greens

    • 1 cup celery, sliced thinly

    • 1/2 cup green pepper, chopped

    • 1/4 cup green onions, sliced

    • 1 12 oz. pkg bacon, cut into 1” pieces & cooked

    • 1 10 oz. pkg frozen peas, thawed

    • 3/4 cup mayonnaise

    • 3/4 cup shredded sharp cheddar cheese

    • Place greens in large glass bowl. Layer celery, green pepper, onions, bacon and peas over greens.

    • Spread may evenly over peas, covering the top completely and sealing to edge of bowl. Sprinkle with cheese

    • Cover and refrigerate 2 to 12 hours to blend flavors. Toss before serving, if desired.

    Snack Party Mix

    • 3 Tbl butter

    • 2 Tbl Worcestershire sauce

    • 1 1/2 tsp seasoned salt

    • 3/4 tsp garlic powder

    • 1/2 tsp onion powder

    • 1/2 tsp cinnamon

    • 3 cups corn cereal

    • 3 cups rice cereal

    • 1 cup pretzels

    • 1 cup bagel chips

    Heat oven to 250F. Melt butter in large roasting pan in oven. Stir in seasonings. Gradually stir in remaining ingredients until evenly coated. Bake 1 hour, stirring every 15 mintues. Spread on paper towel to cool.

    Oreo Balls

    • 1 package Oreo cookies

    • 1 package cream cheese, softened

    • 1 package almond bark

    In a plastic bag crush Oreo cookies. In a bowl blend crushed Oreo cookies and cream cheese. Roll into bite-size balls. Dip each ball into melted almond bark and place on waxed paper. Set in refrigerator and let chill. If desired, drizzle melted chocolate on each ball.
