Word uses a new extension because its new format is so different from the old. If it had kept the old extension, older versions of Word still wouldn't have been able to read the files, but the reason (and the fix) wouldn't be obvious.

There is a free Compatibility Package from Microsoft for older versions that enables them to read .docx files:

Office 2007 offers much enhanced features which requires the files to be saved in a different format, so 2007 uses .docx format. Instead, office versions prior to it use .doc extension, which is still supported by office 2007.

In office 2007 you can still save a document in .doc format. To do this, click on the round button present at the top left corner on the office 2007 ribbon. Click save as... and choose office document 98-2003 format.
