How to make fruit crepes like IHop?
Anyone have any recipes for the crepes stuffed with fruit and cream cheese like IHop? Saw a commercial for them and there is no ihop anywhere around, thought they would make a yummy weekend treat. thanks.

crepes are soooo easy to make,I have an electric crepe maker i bought back in the 80's..but you can use a small skillet..most recipes tell you to cook it on the bottom of pan or skillet(that's right)upside down! but I just cook mine in a small non-stick skillet. If you have any pancake mix,use that or make your own.Your batter needs to be really runny,so thin it out with milk or water(i'm talkin' thin). Put about a tablespoon of batter,maybe more in sm.skillet just turn skillet till it covers bottom or use spoon to spread out very thin,takes about 30-40 seconds,very lite brown,or barely,flip over,take out and place on plate..IHop puts cherry,blueberry pie filling in side,and probably squirt a combination of whipped cream and cream cheese out of a bottle(like a plastic condiment bottle) don't put much inside,cause it will be huge when you roll it up(lol).I also make taco rollups like this,You can put anything in them.sweets,chocolate,syrup(like pancakes).Crepe is french for pancake-like.
Ask Paula Deen she toured France and had some wonderful crepes made right on the street.with lots of butter!
always lightly coat or spray skillet between each crepe!Have fun!

Mix up a sweet cream cheese:
8oz pkg cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla
Cream together until well blended. If you want a slightly looser consistency, add a little milk or cream a splash at a time until it meets your fancy. Don't make it too liquidy -- it will run out while your baking it! Plus it will sog up your crepe. You can substitute mascarpone, ricotta, or even cottage cheese.
Fill your crepes and roll up. Bake according to crepe directions, quickly so as not to mush out the filling but to just crisp the crepes. Or preheat the crepes soft, fill, roll and eat!
Make sure you have whipped cream or a Cool Whip type of topping available, plus additional fruit or a fruit drizzle type sauce. Maybe a sprig of mint leaves would be nice.

Use any recipe for crepes and fill them with either fresh or frozen fruits, fruit sauces or jam and spread the cream cheese on first, then roll up and sprinkle with powdered sugar.
CREPE SUZETTES
1 cup flour
1/2 tsp cinnamon
2 tbs melted butter
1/4 tsp salt
1 3/4 cup milk
2 eggs beaten
2 tbs sugar
OPTIONAL SAUCE
2 tbs butter
1/2 cup jam
cognac (opt.)(heat and pour over suzettes)
Sift dry ingredients into bowl. Add milk and butter to eggs. Stir into dry ingredients until smooth. Pour into hot greased pan, fry until golden brown. Place 2 tsp jam on crepe and roll. Pour sauce on top.

make sure you go get crepe maker?well i guess some people use regular pan but crepe maker is easier.
