David R's cholesterol specific information is off. His nutrition information looks very good.
Total cholesterol should be under 200. It is composed of
LDL + HDL + 1/5 of triglycerides.
Ideal LDL is 60-70, good at 71-100.
Ideal HDL is over 70, but that is rare. Doctors are happy with it near 50. Below 40 is worrysome, and the doctors are very concerned if it is at or below 30.
HDL is the Healthy cholesterol. It helps remove LDL (bad stuff) from the blood stream and carry it back to the liver.
LDL is even safe in some forms. Un-oxidized LDL is a large light molecule, and does not get involved in plaques and blockages. Oxidized LDL is small and heavier, and sort of "sticky", it gets drawn into monocytes that are trying to repair arterial damage, swelling them up and creating the blockages.
Triglycerides are a measure of fats and sugars in the blood. Mine are 50-60, and my doctor is really happy about that, so low is good. Over 200 is bad, and higher is worse.
By eating high anti-oxidant fruits and veggies periodically throughout the day, the antioxidant compounds help keep LDL from oxidizing, preventing it from becoming the small, dense, harmful LDL that gets pulled in to the monocytes increasing the size of plaques.
Best way to control it is through a low fat diet, especially one low in saturated fats. But try to increase omega-3 oils which will boost HDL. Foods high in niacin also help raise HDL, such as chicken white meat. High fiber foods also help pick up fats in the intestines and carry it out of your body, keeping it out of the blood stream.
Long moderate cardio exercise also helps burn up as energy considerable LDL, and for some reason also helps build up the HDL.
But exercise too hard, and your body gets a build-up of carbon dioxide in the blood. The raised acidity causes increased oxidation of LDL. So if one has high cholesterol, exercise, but DON'T go for the burn , or get at all out of breath.

I have to be extremely careful ,or I can get angina from a one meal with very little fat. My HDL / LDL / Tri'Gs / Total are : 44 / 64 / 59 / 120 . No goals except to keep the numbers where they are. - 1 decade ago
High Cholesterol or hypercholesterolemia is where your have high amounts of LDL or bad cholesterol in your blood.
HDL is the good stuff that helps remove other bad cholesterol~
its all very linked with the heart so low cholesterol means healthy heart.
cut out on foods with too much saturated fats such as butter and things with animal fats even trans fats.
use olive oil/canola oil instead and if you have diabetes then keep your blood sugar in a healthy range so that it doesnt combine with the cholesterol to block circulation in your heart.

There are actually four types of cholesterol.
# LDL (Bad) Cholesterol-LDL (low-density lipoprotein) cholesterol is known as "bad cholesterol" because it can build up in the walls of your arteries and form a thick, hard plaque that clogs your arteries and blocks the flow of blood to your heart and brain. Recommended target level = less than 200
# HDL (Good) Cholesterol-HDL (high-density lipoprotein) cholesterol is known as "good cholesterol" because it helps eliminate bad cholesterol from the body. Recommended target level = less than 130
# Total Cholesterol-Total cholesterol is a number that represents the general risk of heart attack or stroke. However, LDL (bad) cholesterol is considered a better gauge of risk than total cholesterol. Recommended target level = more than 50
# Triglycerides-Triglycerides are the most common type of fat in the body. Higher triglyceride levels may indicate higher risk of heart disease or stroke. Recommended target level = less than 200.
To control these levels :
Reduce your intake of
# Saturated fat found in animal products. Saturated fat makes the liver over-produce the bad cholesterol.
# Cholesterol, which comes from animals as well.
# Processed and prepared foods, such as cookies, pastries, and muffins which are also part of the high cholesterol foods and contain high amounts of fat.
# Foods high in triglycerides, since triglycerides make up 95 percent of all the fats we eat.
# You should not consume more than 300 mg of cholesterol per day.
Increase your intake of
# Fruits and Vegetables, which have no saturated fat.
# Seafood which has Omega 3's to reduce cholesterol.
So in a nutshell to reduce cholesterol you must reduce the saturated fat intake which causes the liver to produce more LDL and raise triglycerides levels which thicken the blood. Eating high cholesterol foods is not that harmful as compared to high carbohydrate and fat diets since your liver will cut down making cholesterol if your harmful fat levels are in proportion with your good fat levels.
