What is the best type of wood to carve a pipe out of?

I want to carve a tobacco pipe out of wood and was wondering what type of wood is best. Obviously any "treated" wood would not be good for the health (not that smoking is either).

The best wood to use, and indeed, with a few cheaper exceptions, the only wood used by commercial pipemakers is briar. Briar is the root ball of the white heath tree, and is very hard and dense, yet breathes well allowing the heat to dissipate.
