Do Russians have quick and easy desserts they make?
We are doing a project in school,and I wanted to be sure that we had an authentic dessert.

I've noticed that Russians do not have as many desserts as American or German cuisine. They are not as sweet either. My favorite Russian dessert is pashka, though. It is not super easy, more of an intermediate level.
1 lb/2 cups cream cheese
4 oz butter or margarine, softened
5 oz/4 cup caster (superfine) sugar
150 ml sour cream
6 oz/1 cup sultanas (golden raisins)
2 oz glace (candied) cherries
4 oz/1 cup almonds
2 oz chopped mixed (candied) peel
Mix together the cheese, butter or margarine, sugar and soured cream until well blended. Stir in the remaining ingredients. Spoon into a savarin mould, cover and chill overnight. Dip the mould in a pan of hot water for a few seconds, run a knife around the rim of the mould and invert the cheesecake on to a plate. Chill before serving.

3 egg yolks, slightly beaten
1 cup whipping cream
3/4 cup granulated sugar
1/8 teaspoon salt
1 teaspoon vanilla extract
6 cups small-curd cream-style cottage cheese
1/4 cup butter or margarine, softened
1/2 cup chopped mixed candied fruit
1/4 cup finely chopped blanched almonds
cheesecloth
1. Mix egg yolks and whipping cream in heavy saucepan.
2. Stir in sugar and salt.
3. Cook over low heat, stirring constantly, until mixture just coats a metal spoon, 12 to 15 minutes.
4. Remove from heat; stir in vanilla extract.
5. Place saucepan in cold water until custard is cool.
6. If custard curdles, beat with hand beater until smooth.
7. Place 3 cups of the cottage cheese and 2 tablespoons of the butter in blender container.
8. Cover and blend on medium speed, stopping blender occasionally to scrape sides, until smooth.
9. Repeat with remaining cottage cheese and butter.
10. Stir custard into cheese mixture until smooth.
11. Stir in candied fruit and almonds.
12. Line a 2-quart non-clay flower pot (or any form dish WITH OPENINGS IN THE BOTTOM, like a flower pot has) with double layer dampened cheesecloth.
13. Pour cheese mixture into pot; fold ends of cheesecloth over top. Place pot on cake rack in shallow pan; place weights on top.
14. Refrigerate 12 to 24 hours, pouring off any liquid that accumulates in pan.
15. To serve, unmold onto serving plate; remove cheesecloth.
16. Garnish as desired with additional candied fruit and blanched almonds.
17. Refrigerate any remaining dessert.
~ I like the second recipe more. But it is kind of a preference thing.

INGREDIENTS
2 eggs
1 tablespoon white sugar
1/3 teaspoon salt
1/2 cup all-purpose flour
2 1/2 cups milk
1 tablespoon vegetable oil
1 tablespoon butter
DIRECTIONS
In a medium bowl, whisk together the eggs, sugar, and salt. Sift the flour into the bowl, and stir in along with the milk. Mix until smooth and well blended. The batter should be thin.
Heat a griddle or skillet over medium heat. Lightly oil the pan or spray with cooking spray. Pour about 2 tablespoons of the batter, or as much as desired, into the pan. Tilt the pan to spread the batter out evenly. When the edges are crisp looking and the center appears dry, slide a spatula carefully under the blin. Flip, and cook for about 1 minute on the other side, or until lightly browned.
Remove blini to a plate. Put a little butter on top, and continue to stack the blini on top of each other. To serve, spread with desired filling, then fold in half, and in half again to form a triangle. Mmm Mmm!

YALTA FRUIT SALAD:
Ingredients
1 ea Orange peeled & sliced into 1/4" rounds
1 ea Tangerine peeled, sectioned seeded, & sliced
1 ea pear peeled cored, & cubed 1/2"
3 ea apples cored peeled, & cubed 1/2"
1 ts powdered sugar
1 ts lemon juice (fresh) 4 ea prunes cooked pitted, & 1/2'd
1/3 c mayonnaise
Method:
Sprinkle the mixed prepared fruits with the sugar. Combine mayonnaise, a pinch of salt, & lemon juice in a bowl. Pour this dressing over the fruits when serving.

GOGOL MOGOL
Ingredients:
1 glass (200 g) sugar
3 ea eggs
300 g butter
2 glasses flour
1/2 ts of baking soda
Method:
Mix all the ingredients and use flour to make a soft consistency. Take a non-stick tin and put the dough in it. Make it smooth and then put into the hot oven for 25-30 minutes. When the cake is ready, you can put jams, jelly, whipped cream, or ice cream all over the top.

Strawberries Romanoff, a favourite of the tzar's family:
This recipe serves: 4
1 pint fresh strawberries with stems intact
1 cup freshly squeezed orange juice
1/2 cup light sour cream
1/2 cup granulated brown sugar
1. Wash the strawberries and soak them in the orange juice for a few minutes at room temperature or several hours in the refrigerator.
2. In a small mixing bowl, combine the sour cream and 1/4 cup of the brown sugar. Transfer the sweetened sour cream to a small serving bowl and place the remaining brown sugar in a small dish or bowl.
3. Drain the strawberries and place them in a large serving bowl.
4. Invite everyone to dip their own strawberries (holding them by the stems) into the sweetened sour cream and then into the brown sugar.
Serving Size: 1/2 cup strawberries with sour cream and brown sugar
And Russia has alot of desserts. Pavlova, Bliny, Kulich they just aren't popular with other cultures.
