I don't know if this is the same in vista, i use windows XP, and office XP, the program used to open a file is set by windows not email settings.
Go to my computer, from the tools menu select , folder options then click on the file types tab. This will give you a list of all file extention typesand their default program, simply look for the extention that the attachment to your email has and change the default program by clicking on the change button and select another program.
This is how you do it in XP not sure if it will work for vista but worth a try.

Press windows symbol + E select tools-->options select file types and change the association; this way u can make it work in XP- I have not seen vista in my life probably i wont see it at all since using windows itself is such a pain.

( You only need to do this once )
Right click on the file you want to open.
Hit "Open With"
Then hit Microsoft Word, and check off the box that says "Always use this program when opening these types of files".
And then hit "Ok".
