Coconut frosting?

    If you want coconut taste, add a little coconut milk or extract to regular vanilla frosting. Or, using regular vanilla frosting, sprinkle flake or shredded coconut into the frosting, to taste.

    add coconut extract to plain vanilla or white frosting. It will taste just as good as making frosting from scratch and will be a HUGE time saver.

    Hey, you're gonna love this. I have found lots and lots of recipes on the Net, even international. Just type in coconut frosting recipe. I hate coconut in any form. Just thought I'd add that for reference sake.

    make vanilla frosting add coconut extract and coconut.

    The best recipe I have found and the easiest is

    2 cups sour cream low fat

    1 cup sugar or splenda

    3 cups coconut

    3 cups cool whip sugar free

    I have used it for years and it goes with about anything.

  • Billowy Coconut Frosting

    Start to Finish: 25 minutes

    Ingredients

    2 Tbsp. water

    2 egg whites

    1/2 cup granulated sugar

    1/2 cup packed brown sugar

    1/2 tsp. cream of tartar

    1/2 tsp. vanilla

    1/2 tsp. coconut extract

    1/2 cup sweetened flaked coconut or unsweetened shredded coconut

    Directions

    1. Place water, egg whites, granulated sugar, brown sugar, and cream of tartar in the top of a double boiler or a water bath pan. Place over boiling water (bottom of upper pan should not touch water). Cook, beating with an electric mixer on high speed about 7 minutes or until frosting forms stiff peaks, scraping sides of pan occasionally. Remove from heat; add vanilla and coconut extract. Beat for 2 to 3 minutes more or until frosting is spreading consistency. Fold in 1/4 cup of the coconut. Sprinkle remaining coconut on frosted cake. Makes 3-1/2 cups.

    COCONUT FROSTING

    1 8-ounce package cream cheese, softened

    6 tablespoons butter, softened

    1/2 teaspoon vanilla

    3 cups powdered sugar

    Flaked coconut

    For frosting, in a large mixing bowl beat cream cheese, the 6 tablespoons butter, and 1/2 teaspoon vanilla until combined. Gradually add powdered sugar; beat until smooth. Frost cupcakes and sprinkle with flaked coconut.

    Coconut Butter Frosting

    In a very large bowl, beat 2/3 cup butter, softened, with an electric mixer on medium to high speed about 1 minute or until smooth and fluffy. Gradually add 2 cups powdered sugar and 1/4 teaspoon salt, beating well. Slowly beat in 1/3 cup purchased unsweetened coconut milk. Gradually beat in 5 cups powdered sugar. Beat in enough additional purchased unsweetened coconut milk to reach spreading consistency.

    Coconut-Pecan Frosting

    In a medium saucepan slightly beat 1 egg. Stir in one 5-ounce can (2/3 cup) evaporated milk, 2/3 cup sugar, and 1/4 cup butter. Cook and stir over medium heat for 6 to 8 minutes or until thickened and bubbly. Remove from heat; stir in 1-1/3 cups flaked coconut and 1/2 cup chopped pecans. Cover and cool thoroughly.

    HELLO, THIS MIGHT SOUND CRAZY BUT POWER SUGAR MILK AND VAN THEN ADD COCONUT FLAKES ITS DELISH AND EASY. OR JUST ADD COCONUT TO CAN FROSTING. OR GET COCONUT MILK AND ADD TO POWER SUGAR.
