What is the difference between.....?

Extra virgin olive oil, and "light" extra virgin olive oil?

I have heard that the "light" holds up to high heat better.

    Olive oil comes in different grades. Extra virgin olive oil is the best. It is cold pressed and no chemicals are added during the process. The wording "Light" refers to to olive oil that has been refined (in other words, it has been chemically processed and was not made using "natural" methods).

    The smoke point (the tempature that olive oil begins to smoke) of extra virgin is 250 F. The smoke point of the processed olive oils is 410 F.
